Sandwich Pickles

Sandwich pickles for my favorite “Stulle” : a slice of sourdough bread, salad, cooked ham, some mayo, pickles and fresh horseradish. They are sweet and sour and I put them on almost every sandwich I make.

 

ingredients

800g cucmbers (if you cannot find the ones for pickling, use small regular ones, that works very nice too)
1 white onion
1 cinnamon stick
2 tsp mustard seeds
2 tsp coriander seeds
1 tsp curcuma
5 cloves
300ml white vinegar
150g sugar
1,5 Tbsp sea salt
200 ml water

steps

Cut the cucumbers in slices. I like to add a sliced onion, too. In a saucepan, add the spices, white vinegar, sugar, sea salt and 200 ml water. Bring to boil then add the pickles and onions (no worries if they are not covered in the liquid, as soon as they get hot they will). Heat again on medium heat until simmering and stir carefully. Take off the heat and fill in several or one big jar . You can eat them right away when cooled down. I keep them in the fridge until they are finished.

(When my pickles are all finished, I use the remaining pickle water instead of the 200ml of water for the new batch)
