Pink Radicchio & Grape Salad

What is not to love about this salad… it makes me happy just looking at it. That would be a shame though because it is indeed very tasty: the slightly pink bitterness and the sweetness of the grapes and nutty vinaigrette fit perfect together. The salad is quite stable, so you can pick one from the plate and eat it like a taco with your hands. I also love to serve it as an appetizer, when friends are still standing in the kitchen, a glas of rose in one hand, a leave of pink radicchio in the other.

 

Pink Radicchio, Grape & Walnut Salad

Serves 4 as a starter or side

ingredients

For the Salad
2 pink or red Radicchios
200g red grapes, seedless
50g Walnuts

For the Dressing
3 Tbsp white vinegar
(if you are from Germany or Austria, i loooove the “Hausessig” of Erwin Gegenbauer from Vienna. Believe me, using a good vinegar makes a whole lot of difference)

2 Tbsp Walnut Oil
2 Tbsp Olive Oil
1 tsp Maple Syrup
fleur de sel
1 Tbsp chives, chopped

steps

Break the leaves of the Radichhio and wash it.
Wash the grapes, pick them of the stems and cut them in slices. Coarsely chop the walnuts.

In a small bowl, mix together the Oil, Vinegar and Maple Syrup. Season with salt. Arrange the radicchio on a big plate, the grapes on top, then pour over your Vinaigrette. Sprinkle with walnuts and chives.
