Sunny Side up Cake
ingredients
200g sugar
200g of flour
200g butter
1 tsp. Baking powder
2 eggs
1 vanilla pod
200g curd cheese (German Quark), medium fat’
200g vanilla pudding
about 300g apricots from the tin
a small piece of dark chocolate
steps
Put the sugar, flour, butter, baking powder and eggs in a bowl and whisk with the electric mixer to a smooth dough. Line a baking tray with baking paper and spread the dough on top. Bake at 160 ° C for about 20 minutes until golden brown. Remove from oven and allow to cool.
Cut the vanilla pod in half (lengthwise) and use the knife to scrape out the pith. Mix curd cheese (ideally German Quark, sour cream might work but would give a different flavor) and vanilla, then add the pudding and mix well.
Spread the vanilla cream on the cake, and put the apricot halves on top. Grate some dark chocolate (as a pepper substitute) over it.
TIP: Mix the vanilla Pith with some sugar and keep it in a preserving jar for real Vanilla Sugar.
