Rhubarb & Almond Cake
This cake is super easy to make and a real eye-catcher. It will be the star on every summer garden party.
Rhubarb & Almond Cake
(for a small baking tray, 25x40cm)
ingredients
800g rhubarb
240g butter
200g sugar
4 eggs
225g flour
150g ground almonds
1.5 tsp. baking powder
½ tsp. salt
2 tbsp. butter, melted
steps
Wash rhubarb, pull the threads and cut into pieces of about 6 cm.
In a bowl, mix the soft butter and the sugar with the electric mixer, then add the eggs one at a time and stir. Mix the flour, almonds, salt and baking powder and gently add to the eggs.
Spread the dough on a baking tray lined with a baking sheet. Spread rhubarb on top and brush with butter. Bake in a preheated oven at 180 ° C for about 30 minutes until golden brown.
