Mandarin Sorbet
The perfect scoop of ice cream for the season when we miss the sun the most. It reminds me of the childhood drink “Capri Sun”. To make it even more delicious I like to pour some Cremant over the scoops. This is a perfect dessert for an elegant dinner as well as a pizza party as children like it just as much (without the booze of course).
Mandarine Sorbet
for 1 Liter of Icecream
about 15 organic mandarines
(you will need 650ml of Mandarin Juice)
50-100g of sugar cubes
juice of 1 Lemon
2-3 Tblsp Grand Marnier or Cointreau (optional)
a bottle of Cremant
Rub the sugar cubes on the skin of the mandarines, to let them soak up the citrus oils. Set aside.
Cut each mandarin and the lemon in half and squeeze out the juice. Try it. If it is really sweet, use a smaller amount of sugar. Add the juice and the sugar to a pot and carefully heat until the sugar dissolves. Take off the stove, add the Grand Marnier and pour through a fine sieve. Let it cool completely in the fridge.
Add the mix to your ice cream machine and proceed as instructed by your machine.
Place a scoop in a pretty glas, decorate with a citrus leaf if you like and pour over some Cremant just before serving.
